I'll do this tonight as I'm planning on getting fucked up...
We're doing a bit of a bbq night, on the coal-powered mini-webber we have, there will be a LOT of drinks.

I bought a HUUUUGE rump steak for myself and the girl, which has been slightly scored. I threw some liquid smoke over it, salt, pepper. Set to be served charred, between rare and medium rare...gaaah, can't fucking WAIT for that one.
Shitload of onions pre-cut and ready to grill with those.

We also butterflied some quails - which I've been marinating in a mixture of lemon juice, brown sugar, bit of white vinegar, salt, pepper, fresh ginger, wholegrain mustard, a couple of very hot thin birdseye chillis, some garlic and onion paste I made up, just a little apple juice and some sherry since last night...when we're done cooking the steaks and the coals have died down a little, we'll throw those on, and I'll be making a basting mixture from some spicy peanut sauce and the remainder of the marinade.

I've made some flatbread too which I've partially cooked...we'll be throwing those on to serve with the quail.

Other than...I bought some candy called "redskins" which is probably not called that in the states, I'd assume, ha. It's like super chewy hard rasberry taffy, good drunk food. Gonna get just, so crazy crazy crazy wasted...I hope I don't throw up all the goodness.

Had that on a sandwich with lots of alfalfa sprouts, and a thin slice of cheese.

There does exist a brat burger, which is exactly as it sounds. I just left out the comma. Standard wisconsin brats (otherwise known as the best brats in the world) and my own hamburger mix. I like to shread half a pound of cheddar and mix it into 4 or 5 pounds of lean ground beef. Salt, pepper, onion powder and season salt to taste, I judge by the smell. Mix in enough cheese, and it makes for a juicy burger, even if you like your burgers well done.

Some awesome pizza from plush, my last night down the road from the best vegie pizza place in town. I got the satay sublim, which has fried tofu, mushrooms, red onion, coriander, and satay sauce. and the three cheese which has motza, feta, parma, olives sundried tomatoes and I got vegie sausage and jalepenos on it as extras... $31.5 for 2 mediums but so tasty.

Just got done with some wasabi peas.
Earlier today had some roasted pork belly with crispy skin, some roast duck on rice with bok choy and mild soy.
Last night made some herb infused dough, we made a red wine based fettucine bolognese and I turned the aforementioned dough into some awesome garlic pizzas with sage and oregano to go with it.
Cheeseburger and fries before that.
The day prior we had something like a "beef and reef/surf and turf" that the chick threw together which was t-bone steaks served medium rare on a bed of buttered cabbage, on top of which was lightly cooked bassa fillets, squid cut fresh from the tube, and tiger prawns in a creamy tomato lemon and dill sauce.

It's been an alright few days food wise over here.

Tonight will probably be leftover bolognese/fetuccini chopped up and used as a pizza topper.

Some char-grilled chicken wings in a Portuguese chilli & red wine sauce we made.
Also made some dough with cinnamon, nutmeg and chopped sultanas/raisins folded into it, pan fried (no butter/oil) them on a low temperature until raised and brown...really, really nice these are.
Think I'll have some peppermint & green tea now.

I remember that sandwich...it was the shit...

Last night I had some thing my girl and myself threw together.
It was beef sausages, lamb gravy we made from scratch, brown onions, green apples, tomatoes, fresh garlic, rosemary and oregano. The sausauges were panfried until brown and then immersed in the rest of the ingredients and oven baked.
Very nice.
We has some pumpkin soup with some canna-butter and leaf mixed in too, and some fresh bread rolls.

This morning I had a cup of tea with a little milk and a sweetener (trying to cut down on actual sugar intake), and a bread roll with some vegemite and a slice of crappy processed cheese.

So anyone like...eat anything lately?

grilled potatoes(like fried potatoes but the pan is on the grill not the stove. I add cubed potatos, diced onion, finely chopped fresh garlic, salt, pepper, and lots, of butter)

That is a calebasse with a bombilla. =P

It's a kind of tea mug that's commonly used in South America, like Argentina for example. Everyone has their own unique-looking mug and they're used for drinking a special tea, Yerba Mate. Since I don't live in South America I just got it because it looks cool and I use it for all kinds of green tea. The spoon looking thingy is used as a straw.

Last night we had a curry.
Now I'm not too sure how authentic a curry it was, I'd say it was very least Indian/other south east asian style, the spices indicated that at least.
So yeah, I actually found a recipe for this curry online - we didn't know what we wanted to cook, so I looked for a recipe based on the food and spices we had in the house, and got this.
I want to share it, because it's super simple, all the ingredients are cheap, and really it makes a very nice meal.
This is the second time we've made it, and yeah everyone who's tried it has liked it. Here ya go:

I wonder how long this threads gone untouched?

Anyways, today I had poached eggs on toast with spinach. The toast had a layer of black olive tapenade.

For the last couple of hours, we've had two chickens slow cooking submersed in an asian style liquid stock.

The wife is (hm, just realised I was not sure if I made that particular announcement here yet...) making a chocolate cake. Store bought but we're kind've taking steps to make it better.
Made it in layers, I super-whipped the icing and added extra raw cocoa to it along with used sparingly some chilli flakes I made in the dehydrator from birdseye chillis and some habenero, and a little bit of chilli/chocllate dukkah spice mix.
I'd wanted to enrich the mixture by blending in a seperated egg yolk, unfortunately the last of the eggs went on breakfast.
Final product isn't ready yet, but I'd say that there will be an interesting blend of textures along with a a mild progressive heat.

I guess we're doing something with this chicken afterwards.

So...we had some chicken...by the time it came out of the poaching liquid stock, the chicken was slightly separating itself, the thighs/legs came away from the breast. Put the chicken under a grill for a bit to crisp up the skin, it slightly caramelized due to the stock it'd been in...pretty nice.

I served it with some rice noodles I bought at the night markets in Sydneys Chinatown, on once a week.
They were steamed rolled rice noodles in a spicy satay style sauce.
I reheated them gently in a pan and added some of the poaching liquid to reconstitute the sauce a little. SO nice. Wish I'd had them fresh.

The reason I didn't have it fresh, well that's to do with last night as well.
As I said we visited the once a week Asian night markets in Chinatown...these are essentially uh, semi-flea-markets with a LOT of great "street food".
The noodles...well, I saw them and HAD TO get some, even though I'd filled up pretty well.

I started out the night with a couple of coronas at Happy hour at a place near our harbour which is quite close to Chinatown, the lady had a sparkling white then a strawberry cocktail of some sort. Then I had something called a "pure blonde" beer which is I guess trying to imitate something like a german beer. Not bad. Pretty crisp.

Walked over to Chinatown, had a seat at a place that was advertising "Sake-Bombs" which I found out were glasses of Stella Artois beer which I quite like, with shots of sake sunk into them, like a depth charge.
The mix, I was dreading, but...wow...the effect was nice and they actually tasted good. I will be getting more.

We also shared a serving of 4 pieces of octopus takoyaki at the same placewhich was quite good - I mainly got this because one of the two friends that was with us hadn't tried them before.

SO crowded. But, while I usually hate crowds I make an exception for Chinatown, I'm just "used to it" there.

with a little honey and chilli.

TAKOYAKI again.
This time from a vendor there at the markets with 8-9 guys operating about 16 grills all around. you could just tell that these would be incredible.
Myself and the chick got a pack of 8. Some prawn, some octupus and some crab. They were served with some kewpie doll mayo, some sesame seeds, something like hoisin sauce, some chopped spring onion and shaved bonito flakes that were so thin they blew in the wind.
The ones we had first were "nice", these things though, they were a work of fucking art.
They had their operation SO sorted...we ordered and got our order among 6 other orders, correctly, and within 4 minutes.
I cannot put into words how good they were.

We actually went into an arcade and shared a meal in there too...it had chicken, crunchy green beans, it was hot, had steamed rcie and was served with a chicken/corn soup with silken egg.
It was nice. Unremarkable. But yeah we wanted to sit for a bit and eat something "proper".

Bit more of a walk around and then onto the chinese bakery side-store for emperor puffs, which are kind've like a custard filled bite-sized vanilla cake?
They drum so many of these things out and they were so popular that they permanently opened a side-window JUST to sell these one item...and there is ALWAYS a line of no less than 10 people. Last night of course was no exception.
While the wife waited I went for a wonder to one of the food stalls we'd missed...that's the hard thing, it's not like a hit and miss market this one, it's like EVERY motherfucking place has at least 3-4 things that make you want them SO bad, and the smell is intoxicating.
I was intending to buy a pork belly steamed bun, when I saw those noodles I mentioned AGES ago get served to someone.
I had to have them.
I was totally full at the time, but I needed them. So tonights dinner they became.

Went home on the train, had a beer on the way back.
Nice night out.

Anyways, today I had poached eggs on toast with spinach. The toast had a layer of black olive tapenade.

For the last couple of hours, we've had two chickens slow cooking submersed in an asian style liquid stock.

The wife is (hm, just realised I was not sure if I made that particular announcement here yet...) .

We were wed on our 13th anniversary together, kept the date the same.
Just a couple family members, a few mutual friends.
Non-churchy commonlaw affair.
Went out to a German tavern for some excellent food and drink, caught a ferry at night, spent the night out in the city and had a hotel and breakfast.
Small, uncomplicated. Nice.
We're having another one in 2017, a "bigger" one, and hope to involve our child in that one too.


Today we went to a vietnamese restaurant/diner and shared a "bahn mi" which is essentially a bread roll with roast pork, pate, and some nice fresh salads.

I just ate four pieces of L&P white chocolate!

L&P is a soda drink here in New Zealand, it's lemon flavoured and the company has just teamed up with Whitakers chocolate makers and created this new crazy chocolate! It's got lemon flavoured pop rocks inside, reminiscent of the fizz in a bottle of L&P. Pretty awesome actually.

If anyone wants to taste it, I'll be happy to post you a block in return for you sending me something cool and unique from your country?

Have yet to see this product here in Australia though...

Last night we drove across to the other side of the city, to get some lebanese style flame grilled chicken. Served with pickled radishes and cucumber, soft flatbread, chips/fries, and a most excellent thoum.
We make the drive every now and then, it's so worth it.
Also got to hit up a market that specialised in arabic, indian and nepalese foods and spices, just unlike the range of the stores we have over my way. Always interesting.

Had a most excellent dinner...those dinners that just, no matter their complexity or simplicity, have you feeling like "FUCK Fuckin yeah, that was the shit..."

In this case it was fairly simple.

We threw in corn kernels, peas and zucchini batons were cooked together, lightly done with just a touch of seasoning and butter.
The RIGHT amount of crunch left in the zucchinis without the raw edge, very small window there.

Mushrooms and onions together, which were then added to a packet-mix roast meat gravy which we modified and added some other things to.

Potatoes, parboiled, rolled in a little cooking oil and salt and into the oven.

Rump steak, which the wife vac-seal-speed-marinaded in a special container we have, negativ'd all the oxygen around it, after putting on some worcestershire, salt and pepper.
I took it out of the fridge, unsealed it and let it settle into it's original shape again.
Cooked that on a v/hot pan, seared and left for about 2 minutes on either side and into the oven to finish with the potatoes.
We let it sit for 5 minutes after that while the potatoes got mad crispy.

Added the minimal bleed-out from the steak to our onion/mushroom gravy.

Sliced the steak...moisture retention was excellent. Beautiful pink/red colour on a perfect rare-mid-rare, with just the right amoung of sear and caramelisation.

Just threw all ^that^ on a plate. Seasoned a bit more. Had some bread, the gravy, some thoum, and chilli sauce along with it.

and, of course those potatoes were just the madness...perfect inner texture, just the right amount of bite, crispy skin, that little pocket of air between the skin and the flesh...yow

Gah. Fuckin' hell...just...perfect. Love co-op cooking.

Cooked a turkey. Was a good price at the market. Ten pounds, spiced it up inside, skin and under the skin with salt, pepper, garlic, onion, thyme and dill. Three & 1/2 hours, came out perfect. Came with a turkey gravy packet, and oh my, the gravy is really good. Froze part of it, will eat over a few days.

Made some salmon marinated in some olive oil with crushed red pepper flakes, minced dill, cracked sea salt and black pepper, with minced garlic. Seared meat side down until crispy on the outside. Then popped into an oven at 400 for 10 minutes. Comes out perfect everytime. Then made some mashed potatoes and fresh asparagus with a lemon aioli. Yummm.... lol

Well I mean we try to eat interestingly where possible.
Australia is pretty good for produce and its multicultural food scene, so I'd say location wise it's pretty lucky. You can obtain just about any kind of food, from most cultures within my city, so if it's not made someplace for you, you can make it.

Yeah we both got into cooking some time ago, did some commercial cookery college together, and yeah just like trying things.
Never really use the word "foodie" but I guess by some definitions, yeah, a bit.
...It's not always good though. Today I had a toasted flatbread with cheese and some carrot cake that was from a box and really, well, compared to from-scratch, pretty dry.

Tonight we're ordering from my favourite local pizzeria though, that should be good.

I'm having myself a cup of strong english breakfast tea with a little honey instead of sugar, and low fat milk.
Not only is the low fat/3% kind of stuff lower in fat (obvious) but I find that it effects my lactose intolerance a lot less so I don't just have a blocked nose after using it...not to mention, for tea and coffee drinkers (while I have my coffee black personally) it's actually really good to allow the flavour of the drink to come through, I find now whenever I'm served tea with full fat milk, it just comparatively blocks the tea flavour out a bit.

Also having a sandwich I've prapared in a grille.
Just light rye, some cheese, and a salad mixture of kale, broccoli stems, carrot, beetroot and cabbage.
w/tomato sauce.

Personally I cut my cooking teeth on pre-pack heat/add milk/water type pastas, they taught me about how to season and use herbs to make things a lot nicer.

Nothing wrong with quick, nothing wrong with convenient, definitely nothing wrong with cheap...as long as you throw in enough "real" and/or fresh to the equation, you're good IMO.

Another minute thing. An Indian vegetarian dish with potatoes and chic peas. Not bad. Buffalo pretzels made them even better. Eating Twizzlers now though.

Yeeaaaah I'm not much of a cook at all. My sister's the one who knows how to use herbs and things and how to tweak a recipe just right. I cook once in a blue moon but I'm certainly not in the mood to do so after getting home from work in the middle of the night. Much easier to just cop out for something fast. Once in a while I'll add to them if I think it needs something bad enough. Crunchy texture or more flavor for example.

My proudest combination as of late was a minute bag of plain rice heated up and topped with a bag of Asian chicken nuggets. Cost less than $2.

I made a bake tonight.

It was some minced beef I cooked, shredded and mixed some oregano through.

I grilled some yellow and red capsicum (er, bell peppers?) with some Spanish onion.

I heated through some frozen broccoli and cauliflower, and added some sliced single clove garlic (these guys, they're great https://en.wikipedia.org/wiki/Solo_garlic ) , Himalayan rock salt and white pepper.

I grilled some short cut diced bacon.

Threw that all together in a large frypan, added some more oregano, thyme, and a little rosemary, applied a little more heat and a portion of a store-bought jar of Alfredo sauce.

Put that all in a slightly spray-canola-oil'd baking pan, added some mozarella to the bottom, then the top. Baked.

Was pretty decent. The kid loved it.

Quite similar, but with a slightly punchier/more citrus vibe.

I went to the Sydney Good Food and Wine show yesterday with my two girls and our niece. It happens once a year, it's HUGE. There's...
*Local and international celebrity chefs that perform/cook live, and do signings.
*Existing foods on the market to sample and buy.
*New and upcoming/yet to be marketed foods and drinks from companies looking to get picked up and marketed.
*Kitchen/Cookwear, both existing and newly launched.
*Demonstrations and seminars of things like new coffee machines.
*Alcohol, even if only by sample...one can get SO wasted here if so inclined.
*Produce from all corners of the country, and some from NZ as well.
*Many "deals" done so you get things much cheaper than they'd usually be.

It's like a $20 entry fee to basically get free shit all day.
It's a great day out. Yesterday we spend 6 hours there with ease...got our apron signed by another few celebrity chefs, met a couple of former contestants on some of the shows we've watched that are running their own businesses now, and got my kid her first cook-book, and filmed her meeting and signing with the chef that wrote it.

As for what I ate?
You name it. I didn't drink too much, but tried some nice peach vodka?
SO many food samples.
There was a lot...really, a huge amount of things...I felt so damn stuffed afterwards, and we've brought home a ridiculous amount of food.

It's about the only time of the year I'll actually tolerate a crowd, and we make it a point to go every year. This was our first time in 2 years though on account of the pregnancy and infancy...this one was Rivers first...and we'll be keeping it as a family tradition.
It's good to have been back.

You probably do, or can get access to them someplace.
They're not as hard as coffee beans usually are inside, I'm fairly sure they've been roasted and perhaps sugared a little, they seem more brittle inside.

We have milky way, but it's different from your standard ones too, no caramel.


I've just thrown some various meats that were in the freezer in a closed pan, with a little water, cherry tomatoes, some oregano, ginger, garlic, spanish onion, himalayan rock salt, white pepper, and some "woodfire pizza" inspired seasoning that I've yet to try. It's mainly minced meats, so when it's all done I'll probably throw it onto a bread roll with some salad.
Smells great right now.

I had some of those during my internship in college once. I was hesitant to try them, but they're surprisingly addictive. ::smile::

If you like that...I tried this stuff yesterday, it was water extracted from the Birch tree.
Quite similar, but with a slightly punchier/more citrus vibe.
Apparently holds much of the same properties.


I haven't heard of the Birch water, but I may stay away from it if it's citrusy. I down quite a bit of O.J. and I'm not sure I need more citrus!

I've been experimenting with some fruits and coconut water in an attempt at some fusion but I haven't found anything that really strikes my fancy. Tomorrow I'm trying blueberries, so my hopes are high for something delicious to develop.

I ate a scrambled egg and a piece of toast. I did this because when I looked in the fridge this morning, all I saw was one egg, one piece of wheat bread and a bit of milk. So, after that amazing breakfast treat, I think a trip to the grocer is in order.

I have a delmonico steak thats marinating in a really tasty garlic and herb mix. That, along with some roasted dill potatoes and steamed green beans with a tiny bit of apple butter, will be my dinner. Cooking for one tonight, but I'm still going to spoil myself.

Uh, not really? Kinda?

I mean myself and the wife both had an interest in cooking, borne from pretty much both of our collective sets of parents being pretty shit at it.
So we started cooking more, and I taught the wife (then gf) a few of the things I knew and likewise.
Watched a fair few shows together, started our collection of cook books (now at about 84 of them I think).

Then, we both enrolled in culinary college. Now, to be a chef you need a certain amount of "industry hours" and to complete absolutely everything, including the management side of things, staff training, stock and order control, nutrition, handling, storage, and a bunch of other HR type stuff.
Not to mention the hands-on actual learning how to cook and prepare/present recipes.

We did all the hands on stuff, all the cooking, prep, and presentation modules.
We did Proper hygeine/handling/refrigeration and storage.
We did a little bit of nutrition and "working in an ethnically diverse workplace" type stuff, conflict resolution and all that.

In terms of the theory/bookwork beyond the attached modules to the hands on stuff, we did about half, and I cooked a little bit for work.
Didn't really like it though, killed my passion/interest in cooking and sharing with friends and family, so I decided it wasn't for me career wise.

In terms of qualification, we both have certs 3&4 in commercial cookery - which I'd say realistically would qualify you to run your own catering operation, or to cook, but the actual "chef" title is not something either of us completed.
There's still an interest in cooking and creating though.
Bit harder now with the kid, though we're focussing on making healthy food that's actually good, and not too time consuming.
Of course, we still 6-8 hour slow cook and bake sometimes, that will never be gone.

We've visited the good food and wine show and local organic markets many times, trying what new things/foods/equipment we can find...and that's about it.

I had quite a nice salad today.

I didn't make it, but I ?created/wrote? it?

Mixed green leaves including kale.

Steamed chicken.

Grilled Capsicum (red)

Artichoke hearts

Fetta cheese.

Pumpkin.

I had it dressed with a little olive oil, lemon juice, cracked black pepper and some dried chilli flakes.

Took some walnuts for crunch as a free of charge suggestion of my salad guy.

Really, REALLY excellent salad right there, folks - I'd recommend throwing one together for yourselves.

Just one of those things that I thought about for a bit, got my mind set on (it's weird...does anybody else here do recipes in their mind to perfection before ever making them/having them made?) and it turned out exactly how I wanted it.
Gaddamn perfect lunch, with enough left for an afternoon snack to boot.
