i just get seasonal depression so the darker months with shorter daylight hours are bad for me. I also really can't stand being cold.

I know what you mean. The biting icy chill is annoying. Shame about the seasonal depression. Just thing about the good stuff. There was Halloween and Bonfire night, Christmas is only a month and a half away, then there's new years eve and new years day. Then you have the whole new year, with great films coming out amongst it all.

Dominos pizza
Most of it left in the fridge at this point.
1: puff pastry base, extra sauce, plain cheese.
2: thin base extra sauce, pepperoni, olives, pineapple, anchovy, chilli flakes.
3: puff pastry base, lamb, olives, mushrooms, garlic, oregano
Also got a plain garlic pizza as they were outta garlic bread.
Ordered a few cokes and some choc-fudge brownies with it.
Ate about 3 slices total.
S'ok, this stuff doesn't seem to make me sick like pizza hut always does...

Last night we made some pasta (mixed some "remainder of bag" mini shells and mini tubes, ha) with breast chicken, black olives, grilled and fresh mushrooms and onion, and made a cream based sauce with cream (duh) some thyme from my garden that I semi-grilled to dry out, oregano, white wine, fresh and roasted garlic, a touch of cinnamon, a tiny amount of salt, lots of ground black pepper.
...and I'm drinking my mother.

Bhuja mix (or bhel puri...something of the like...small spiced indian crunchy snacks for those that don't know) with some panfried curry leaves, and a full masala dosa set from this 'lil south indian hut that comes every week at the organic markets.
$10AUD for two meals, really good shit too, up there or above most indian restaurants I've eaten in...most of them are a tad westernised, not this place.
Got some coke and a strong coffee too.

Man, I love spring dining around here. Had a nice feed of some regional cuisine:
Handpicked fresh fiddleheads and equally fresh sea trout, with rhubarb pie for desert. Just a nice simple meal, but damn...can't beat it. Little bit of lemon on the fish and a sprinkle of vinegar on the fiddleheads, and I'm all set.

I made a mushroom and cheese omelette, had a vegie snag on the side and a coffee. The place I just moved into doesn't have a good frying pan for an omelette though. But I managed to save it. It still looked and tasted like an omelette in the end, it just wasn't easy to manouver.

Just made what was probably the least attractive omelette in the history of man...didn't grease the pan properly, had a bitch of a time trying to fold the thing...not to mention the fact that I chopped the broccoli, eggs and cheese together, so it was this sickly off-green colour. Adding to the mess, it kind of ripped on the way out of the pan, and ended up on the plate resembling something I'd rather not describe.
But goddamn was it ever tasty!
This is why I can never be a chef...my presentations needs a shitload of work, even though everything usually turns out well otherwise.

Some grilled bread, with cheese, and rather a lot of baby spinach.
We made some chicken gravy yesterday, so I reconstituted then further reduced that, chopped mushroom stalks while grilling the mushroom tops, served the sauce/gravy type deal over the bread and spinach, and sliced the grilled mushrooms over the top.
This was a delicious meal.

We started preparing food for this evening last night, not really because we had to or anything, just that we were a little bored and we "could".
Tonight...I'll be drunk, so I thought I'd post this now..., we'll be having some chicken wings, roasted (kind of) potatoes, and a home made gravy from scratch.
I also picked up a few french stick loafs so that'll come into play as well.
(here you go, hammerfan & newb)
Now, with the chicken wings we generally cut them in three pieces, so that you have the middle piece and then the "drumette" kind've bit on the end there.
With the wingtips we generally retain them because they're not too palatable, though they do make for a rather good gravy, which we've already pretty much made.
So back to the wings for a sec, so you get these little segments rather than a whole wing...I find that when you're grilling them (as I do) as a whole wing, you don't get completely even distribution in the cooking process, sometimes if it's a particularly large wing you can still have slight pinkness towards the thicker end, and have it a little dry on the other...this is why I generally separate 'em for cooking too.
So chicken's good, hm?
You can pretty much throw whatever you like on chicken pre-grilling, and it'll taste good. One thing I've grown rather fond of is flouring it. It's not quite battering it, it's not quite breading it, but it's healthier than the aforementioned and it gives you a little bit more of a dimension to the texture, I find it also seals in the flavour/juices a little more as well.
So what I do with mine is, I dip 'em all in Worcestershire sauce then let them sit for a while. If you don't mind it being slightly less "healthy" ha, you can also coat 'em in egg yolks, but it's not really necessary. You can also use alternative liquids dependent upon their suitability to your intended flavours. Light soy, lemon juice, tawny port but to mention a few.
I make a mixture of plain (not raising) flour, a touch of salt, pepper to taste, a little chilli powder, some cinnamon powder, and some smoky paprika, along with a teaspoon or so of powdered VEGETABLE stock.
Just make a plate of that, or your desired flavours (even a good curry powder works here) and mix it all up.
Take your chicken wings/wingettes, and roll 'em around in it, until they're "dry" as in, no more of the mixture will cling to 'em.
I'd recommend if you were grilling on an indoor grill, just use a bit of canola/vegetable/olive oil spray rather than the actual oil itself, and you should be good to go. I know when chicken's ready by feel now, but if you have troubles here, just take a "sample portion" off the grill, make it one of the bigger pieces, cut into it and check it out. If it's not pink inside, the rest ought to be ready.
They should be golden brown and full of awesome.
You can of course make chicken gravy after roasting a whole bird, but this is how I'm doing it in this case, or if I don't happen to be cooking a whole chicken.
With the gravy, as I said we generally stock up on wingtips for this (purchased 5 kilos of whole wings for this amount) they're not a whole lot of good otherwise compared to what they can do now. My chick usually makes the gravy, and I assist when it comes to flavours, though I've been trained and observed/performed the process enough times, so you're in good enough hands.
Look if you haven't made one before it's pretty easy, and definitely better than the powdered brands...they call it that right? S'been a while here.
Anyways, moving on...
We have a wok, a BIG fucking wok. So we put our wingtips in their, and put it on medium/high heat. You can spray on a little oil, or add some butter if you don't wanna be too health conscious, I mean it's gravy anyway, right?
For this gravy, as we wanted it to be a little stronger, we also purchased a chicken carcass back, and 4 chicken necks.
Another thing you can do is use a few chicken livers also - they make the gravy SO good. But in this case, the carcass came with a bit of that still stuck in there along with the kidneys, so it wasn't needed.
So essentially fry this stuff up, season it a little - then let it stick to the pan and rip itself to pieces it's all good. Keep turning it.
Now, make yourself some vegetable stock liquid if you don't have any on hand.
The brands of v-stock are pretty good these days, though obviously if you've taken the time to make the real thing you can't go wrong there.
Now a few people might use chicken stock in this gravy, and also with the flour mixture I mentioned before. Chicken stock is ok, but vegetable stock has a greater range of flavour so we generally use that - the chicken can carry enough flavour of it's own for the chicken factor.
So anyways, mix up some water and stock powder/flakes/cubes.
Then pour in about a cups worth. Add a few splashes of Worcestershire at this stage, and also some dried sage...I think it goes GREAT with chicken, but you can use whatever flavour you like - go easy on the sage though, if you use too much it can get bitter. Maybe add a couple of peppercorns.
Let that cook down again, and let the pan/wok start to brown up, just as before, but this time let it go a little further.
As long as you're not cooking on stupidly high heat nothing should burn, just brown. You can throw in a little onion and garlic too. Let them cook along with it.
Make some more stock liquid and add another splash of Worcestershire.
For this amount of wingtips/chicken material, we make 2 litres of the liquid, to end up with about 1 - 1.25litres.
Add a small amount of the liquid, and attack the browned material with a wooden spoon, scrape it all up into the liquid. Then, pour in about half of the rest of your liquid straight up. Bring it to the boil, then go between simmer and boil for heat the rest of the way.
Now, I like to throw in a little bit of fresh thyme at this point. Dried is fine, but I'd really recommend growing it, it's a great all 'rounder, and a very hardy little plant.
When your mixture is reduced to about 1/3 of what it was, add about 1/4 of the liquid at a time, each time allowing the mixture to reduce a little more every time, say for each bit you add in, let about half disappear, stirring here'n there as you go.
Now when all the liquid has been added, let it simmer for maybe 4-5 minutes more, then it's time to remove all your bones 'n stuff.
Just pour it through a strainer into a big cooking pot or bowl, and allow the strainer to sit on top while pressing the solid material so as to get as much liquid out as possible, let it drip for a bit, then pour it back into your other pot/pan/wok you've been using, put the strainer back over the bowl etc.
Bring it up to the boil again, then down to a high simmer.
Should be a nice, almost butter-like colour by this stage.
Make yourself a slurry. This (generally speaking) is a mixture of water and something else, makes a "mortar" or sorts. To thicken, use cornflour.
Make sure it's CORN cornflour as long as nobody's allergic, as I find the other one "wheaten" cornflour has a gritty texture and doesn't thicken half as well.
So get like 2 tablespoons of this in a little bowl, and mix some water in.
You're not making silly putty, so it should be about 1.5 parts water to 1 part cornflour, so it's still relatively liquid just thicker than water.
While your mixture if still on high simmer, stir in some cornflour slurry bit by bit, you will notice that the mixture gets thicker as you go.
Check under your strainer again, you'll probably find there's more liquid waiting for you, throw that in, and dircard your bones 'n stuff.
Keep adding the cornflour mix until you're happy with the consistency.
Now, it will also reduce a little more during this stage - between this and the thickening agent, you should get a nice, rich gravy.
The potatoes...ha.
I'll make this quick 'cos it's pretty easy and I assume we know our potatoes?
Anyways,
Cut the potatoes up to your desired size, skin 'em if you like.
Boil some water. Add a touch of salt.
Throw in your potatoes.
Boil until they're about 25% less cooked than a ready boiled potato.
Prod 'em with a fork to check.
Take them out, allow water to drain.
Throw them into a big bowl.
Poke 'em all around with a fork, or scrape them with the fork, adds a nice surface.
Mix in some butter/spray oil/olive oil, whatever you like, with them.
I add dried oregano/basil and just a bit of sage, salt, and pepper to mine.
Cook on a medium high heat until golden brown, turn 'em once during the process.
Shouldn't take longer than a half hour in an oven, or 15-20 minutes in a contact grill like a Foreman (that's what I use at the moment, oven outta action :( )
Should be good.
So I figure I'll do what I did last night with a bit of the french stick loaf.
Cut it diagonally and rather thick, spray on some canola, season it, add oregano and basil, and grill it until partially blackened.

Gonna have a toasted crumpet with some vegemite on it in a bit.

Grilled crocodile with lemon myrtle and some other local spices, served with some semi caramelised spanish onoin, and a warm pineapple, port, clove, and nutmeg pulp.
Some lemon zest yoghurt over it.
Some grilled beef kebabs with mixed spices, orange, mint and cumin.
Made a garlic yoghurt sauce for that which incorporated similar flavours.
Served on some (the girl) home made ?chapati? bread, and iceberg lettuce.
Mixed Grille - steak, chicken, mushrooms, chicken sausage, lamb sausage, All in various spices, not sure, this one wasn't prepped here.
Some spicy crumbed/breaded chicken cooked in a foreman roaster thing.
Had a strawberry sundae with caramel down the bottom.

I made some lamb fillet schnitzels from scratch last night.
Guess if anyone's interested, I first slow grilled some fresh bread until it was completely dry, added a little flour, and otherwise seasoned it with the following, crushed up: some lemon thyme from the garden, dry sage, some chilli flakes, lemon zest, a touch of ginger powder, rock salt, and peppercorns.
Mixed those together with the dry(er) mix, and dipped the lamb in some whisked (barn-laid) eggs before coating them in the mixture.
While I was cooking them (med-high heat) I applied a few drops of lemon juice here and there. I'm pretty good at these now, so yeah it was nice.
Put them on some toasted poppyseed rolls, with standard iceberg lettuce, finely sliced spanish onion, alfalfa sprouts, some whole egg mayo and a little more pepper.
That was last night, haven't eaten anything since...had a sip of coke...probably the WORST way to start a day...ech.
Will be making some chapatis today.

been on a fresh fruit and veg cleanse for a week and last night made my first "meal" in a while... a penne provencal
a whole red onion, julienned and sauteed in olive oil with fresh sage, thyme and rosemary (of course salt & pepper)
after they were carmelized, I added a whole gala apple, diced and 1/2 cup chicken stock and a small pat of butter to give it a bit of richness
threw in a grilled diced chicken breast and tossed it with penne... mmmmmm, very autumnal and the kids ate it up

We (finally) got a new oven....that's right folks, I haven't spoken much about this because it was a pretty hard time, I've been confined to stove-top and foreman grill cooking for a little over a year now believe it or not...
Over the last few days we've made a few pizzas in there, bases made from scratch. From margarita style to like 15 toppings.
Though last night I got what I really wanted. Baked potatoes. A big goddamn tray of baked potatoes...I can't say how much I missed them.
So yeah this was us and a friend.
We also stuffed (stuffing also made from scratch) two chickens, and cut up, segmented, and egg-dipped, spiced/coated two more.
Had some green beans, and served it all with a chicken gravy we'd been cooking since the day before.
Goddamn...I just kept eating and eating...lots of leftovers still.
Next time we have a get together, it's pizza pies.
Though I can't wait to throw together my baked green curry casserole again.

It's like a red meat...more towards beef in texture and flavour than lamb, with a slightly "gamey" edge to it, a little difficult to describe but it's quite nice.
I'd recommend trying it if ever you can, just have it served seared and medium-rare at most...see if you overcook it, it'll make burnt steak look tender as it's a very muscly structured meat - one of the reasons I like it, is that it's one of the lowest fat meats in existence.
...though it makes me a little jumpy

I'm trying a new recipe...something I just got in my head, now, some of you might think it's a little weird.
It's lambs heart, stuffed.
If you're one of those people that aren't into organs, that's understandable - though I will say in my experience, the heart being a muscle it's more like meat in texture than organs/offal.
So, I haven't done this yet...I'm still working out a few kinks...
This is part of an email talking to a friend, I'll alter anything that doesn't make sense:
"Got the lambs hearts...revised my recipe a tad...
Gonna cut some of the middle out of them to make space for stuffing, put in the marinated artichoke hearts, some bocconcini, oregano and thyme from the garden, yellow capsicum and some zucchini inside with perhaps just a few bread crumbs, so essentially it's going to have the italian roasted veggies theme going on...then wooden-skewer 'em shut, throw 'em into a pre-heated oven relatively high heat while I make the sauce, I MAY sit them in some canned tomato and occasionally baste them with that...not certain on that factor yet though.
The sauce I'm going to make by cooking up the inner heart meat on a frypan with some actual butter, to base it on blood so to speak...Then adding a little veg stock, some roasted garlic I did on the foreman grill, some fresh rosemary we stole from tims neighbour, and the red wine (just a cheap merlot) and gradually letting that reduce.
Towards the last 5 minutes I'll be adding some CHERRIES *which was a kind of cool decision anna and I came to while shopping*
Gonna sit them on some sliced cream/leek/chive potato and celeriac mash, the sauce over the top of the hearts.
I'm not really sure how it's gonna turn out...I'm only going on bits and pieces I know about and my personal taste and my knowledge thus far, but it sounds nice and yeah hope it goes well."
So yeah just thought I'd share something a little different with you guys,

One time, my friend told me to order a vegitarian pizza...I was so f'n trashed at the time, but I didn't think I was doing anything wrong, and when it came it had like no cheese on it at all.."there's something wrong with this...it's not cooked right!"
I realised what I'd done as he was calling them up all pissed off, and started laughing, I think he made me grate some cheese over it...
This other time I was in the city and some ?mormons?...those "come to our church, it'll be a really cool time" guys, came up and tried to talk my ear off, and it struck me that I would be nice to 'em, tell them I was coming along, but give the same friends name and number. When they called him I'd actually forgotten it, (I used to be waaaay more stoner like) but of course had a hard time not cracking up...really hard time...he was on with conspiracy theories that he'd been spied on or identity theft etc, I couldn't stop laughing at him.

Lately we have done a fair few baked goods in lieu of more materialistic "Christmas gifts" to our friends.
We made, and I've recently eaten:
Chewy chocolate cookies with white/dark chocolate chips.
Anzac biscuits with chocolate hairstripes
Anzac biscuits, no chocolate
Vanilla shortbread
Honey Jumbles (like gingerbread with a few more spices)
Vanilla cupcakes with pastry creme
Sultana raisin vanilla cupcakes
Chocolate cupcakes with chocolate pastry creme
Lots of sugar...ech...but nice.
Today (well, "christmas" day) we hit up a local bakery VERY early in the morning and got
*A croissant
*A cheese/bacon soft roll
*A chicken and vegetable pie (which was not so great)
and a coffee.
*Some long soft bread rolls.
For lunch we had a cheese and kumato roll each.
For dinner, the remainder of the fresh bread, some chilli tuna, spicy sardines, cucumber, houmos, tzatziki, water crackers, sliced ginger, avocado with lemon, smoked salmon, and kumato. Probably a few items I forgot there, but yeah that kind of thing, very nice/not heavy, refreshing and awesome.
Hot chocolate now.

I have found that I quite like something...
Have you ever toasted some bread for a sandwich, and then say wrapped the sandwich up for the next day and put it in the fridge?
When you eat it, it tastes like toast, just chewier instead of crunchy.
Having had to take in my lunch a few times during this security course thing
(22 hours just done over this weekend...yech), I've discovered that I quite like this...although I've had it before, I'd never really realised - and of course this will be completely spoiled if it gets made damp by certain ingredients like tomato, lettuce, beetroot (though these things could be taken seperately and added later if one were so inclinec)...but yeah, very nice, if you make a toasted cheese etc one night, and eat it the day after, at least I think so.
I had one of those today for lunch which was nice, minced lamb cooked like a hamburger, with oregano, rosemary, cumin, salt, and lime juice. Had that with some cheese and tomato paste in there.
Good shit.
Also had a pluot for breakfast, and some lamb pasta, and some chocolate along with a cup of tea when I got home.

Coffee earlier.
Leftover lamb pasta with a grilled cheese this morning.
Dinner...probably gonna make some dough, and throw together some tuna flatbreads.

Yeah, all good.
Honey Jumbles:
60 grams of butter
1/2 cup brown sugar
3/4 cup golden syrup (honey instead or as well just maintain overall quantity)
Cook those for 10 minutes on low heat so they bond etc, in a pot.
Put the mixture in a bowl to cool a little.
Stir in 1 egg
Sift: 2 1/2 cups plain flour, 1/2 cup self raising flour, 1/2 tsp bi-carb, 1 tsp ground cinnamon, 1/2 tsp clove powder, 2 tsp ginger powder and/or ground ginger, 1tsp mixed spice - or just equivalent quantities of mace, cinnamon, nutmeg.
Stir that into your mixture so far.
Knead it all until it's no longer "sticky" that much.
I'd refrigerate after covering it up...probably more than an hour, overnight would be great as the spices will develope into it a bit better)
Make your shapes however you like onto a lightly greased tray.
Cook in a preheated oven at 175-180 (that's celcius) for 12-15 minutes, just keep an eye on them.
They're pretty good on their own, a little like gingerbread with a few changes.
You can make up an icing from a beaten egg white, 1 1/2 cups of icing sugar mixed in with 2 tsp plain flour. Some lemon juice and vanilla essence for flavour, cab sprinkle some cocoa or cinnamon on top too.
Tonight, I made my own flatbread again, having some tuna and sardines on there, see what else is left in the cupboard haha, day before payday here. Maybe a can 'o baked beans.
