I'm pretty sure I've seen every episode of:
Family Guy
Scrubs
Futurama
Chowder
Masters of Horror *Counts in my book since it was a show on Showtime before a bunch of DVDs*
Invader Zim

I know I've seen quite a few episodes of South Park and That 70s Show, but I'm not sure if I've seen all of them.

Six Feet Under
Dexter
Mad Men
Big Love
The Office (US & UK)
True Blood
Arrested Development
Sports Night
Still Standing
and I bunch of reality shows, but I wasn't sure if we were counting those

West Wing will be the next to go on my list, I am about halfway through the 6th (of 7) season. I would have Pushing Daisies and Dirty Sexy Money on the list, but about 5 episodes of each are sitting on Tivo. Also, I recently bought the first 3 seasons of Supernatural, but I am only about 4 episodes in. Same with How I Met Your Mother, got all of the available DVDs but am only on the first season. I will finish all of those.

I'm pretty sure I saw every episode of American Gothic, as it was axed after the first season. I'm sorry to saw that I've seen almost all, if not all, episodes of the X Files- only the first 4 seasons were worth watching. That's all I can remember...

I've also seen every episodes of the anime series Cowboy Bebop and Neon Genesis Evangelion. I also first saw Gunsmith Cats on Australian TV even though it was a Japanese video mini-series.
