"Ghosts of Mars" has some great, great flying disc weapons (probably some of the better ones).

I also like your description of flying disc killers as "flapperjacks"

I'm after a movie like Without Warning, with the flying discs. The movie, buckeroo banzai across the 8th dimension is that all one movie title? The name sounds very obscure.
