Chilequiles!
For those of you who don't know it's sliced and fried tortillas with eggs, chile and a ranchero sauce (like enchilada sauce) Funny thing is, no two places make it the same and every Latino will swear that his/her mom makes the best.

It looks like this is a PERFECT time to mention croissant breakfast sandwiches and hot black coffee! Bet that sounds real good to some of you right now, doesn't it? ;) Late at night? It doesn't matter. Breakfast can be enjoyed any time!
