any commentary by John Carpenter is informative - he likes to educate people but in an entertaining approachable way.

Kevin Smith commentaries are usually even funnier than the films ..

Sam Raimi/Bruce Campbell commentaries are also extremely funny ..

Then you'll want True Romance SE or From Dusk Til Dawn SE, both of which have the QT commentary. Dusk is QT and Robert Rodriguez together.

Best commentaries I've heard for non-horror: The aforementioned and fellow Jersey boy Kevin Smith. PT Anderson on Boogie Nights does 2 of the best I've ever heard. Wes Anderson for The Royal Tenebaums and The Life Aquatic. Romero on Dawn and Day. Made and Swingers with Favreou and Vaughn, hillarious. Goodfellas, Casino and Gangs of New York with Scorsese and Coppola on The Godfather 1 and 2.

In Army of Darkness: Official Bootleg Edition has a great commentary. Its basically just Raimi and Campbell saying, "Yeah, I don't know what the hell THIS was..."
