Kind of. The blade must enter the corner of the eye socket by the top of the nose, then press it deep beyond the eyeball and proceed to scoop the knife towards you.

sounds like it would make a mess out of the eye that way.
pointy end would cut into the eye .. if the end wasnt pointy it would mash the corner of the eye.

A good way would be one of those mellon scoops .. or better yet if you could find something like a small suction cup .. just pop the bugger out and cut the optical nerve with a pair of fingernail clippers.

and voila ! a nice clean eyeball to put in a jar or something.
Hang it on the xmas tree.
(make sure the optical nerve dries into a hook shape.)
