Cincinnati Chili Spice Ratio

Here's a ratio I have been working on......it can be used to flavor a chili recipe. It's somewhat close to the Cincinnati chili that Rayne sent over here...

2 teaspoons ground garlic
1 teaspoon unsweetened cocoa
1 teaspoon cumin
1 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon cloves

This mixture can be added to a basic tomato sauce and crumbled ground beef chili. Chopped onions also work, and hot chili pepper can be added for heat, although this Cincinnati chili thing is not supposed to be a hot spicy chili...it is more of a warm relaxing assemblage of subtle spices.

Sounds pretty good apple......I like chili over nachos with cheese...mmmmmm

Its a saturday night.....you just realized.......shit....i've got a group of people coming over to play parcheesi...what do I serve them?

A nice quick recipe





Layer a pie plate or any oven dish with the cream cheese......pour the chili [you can use store bought or crabapple's recipe would do nice] over the cream cheese....cover the whole thing with the shreeded cheese......bake for about 15 to twenty minutes in a 350 oven. Top with a dollop of sour creme and serve with nachos for dipping.

Always a hit at the newb household.

Yes...I have a menu for a GOld Star restaurant, and they have a cream cheese dip available that is set up like that. Never had one but it sounds tasty.

I tried changing the spice ratio by adding a little more chocolate, by the way, and that seemed to help.

Never thought of putting cocoa in chili.....I know some people use peanut butter.

Rayne can explain this "Cincinnati Chili" thing better than I can...she sent some of those cans of chili my way, and I swear, this stuff was so tasty that it's unnatural. I found myself looking it up on Ebay and so on...expensive if you buy it pre-made. So I am attempting to recreate it.
