I second that. S&Man is great (although sort of a mockumentary, since it's laced with a fictional plot as well. Or is it... ;)).
There's also a very analytical doc called
The Perverts Guide to Cinema. I only made it about a quarter of the way through though. Am sure it's very clever and interesting if you can understand the guy properly, but it all went over my head (and also his accent is a little difficult to follow sometimes!). Still, some well-made scenes, and Slavoj Zizek is certainly very passionate in his analysis.
