Despite not being technically "zombies", I'm gonna say 28 Days Later is most definitely one of my faves. Same reasons already mentioned, same post-apocalyptic themes, same commentary on humanity and how people really aren't civilized when put under stress, or will find a way to justify doing something to someone else for their personal needs. Zombie movies aren't really about the zombies so much as showcasing the stress they put on society and what a thin veneer it is.
I liked Sean of the Dead a LOT...but it's more of a humor thing for me than a zombie movie.
Original Night of the Living Dead is also on the top of my list. It set the entire atmosphere for zombie movies afterwards...being overwhelmed by hordes of undead and having to hole up and hope that help comes while your numbers are being whittled away.
