I agree with you to a point here, where you say that if you don't keep eating healthy and keep the excersize going, you'll gain the weight back...which is the same as saying that if you don't do it in the first place, the weight will stay, yes?
The thing is, diets DO work. Follow me here...a diet is a term that gets thrown around and associated with use for weight loss and the "fix", something considered to be a temporary thing by many...well yeah, there it is, it will only be effective for as long as you make it so.
A diet, is in fact just words for what you're eating. Everyone has a diet, whether intentional or not. Essentially all you do whilst consciously "going on a diet" is making alterations to your eating habits.
So if you're thinking long term, it's probably best to organise an ongoing diet of things you can live with. The "cheat night/day" thing is a valid idea for those that have difficulty absolutely being without those not so healthy things they really want...I think left as the one night/day is wise, and worth the willpower.
The whole healthy food thing...
It's not all that bad. You can alter your diet to include some pretty damn delicious food. Not everything has to be "salad with no dressing" kinda deal...if you pick up a few things about food prep, herbs and spices...etc...then you're largely set.
Wholegrain bread is something everyone should get into...the seafood thing works...there's theories out there about eating no cooked foods at night (not sure if this one's valid...), excersizing after dinner is probably the best time, burn off the heavy stuff, if you get hungry after that's when you go with the salad/fruit....you don't have to go the "low fat" option with everything, just eat less of the items that are high in fat, remove fat from meats, skin from chicken, control portions so that they'll fit in the palm of your hand, eat some steamed vegetables (which you can prepare in SO many different ways, just never OVERsteam, they should still be a little crisp and vibrant in colour ,else you've killed the nutrients) as the rest of your meal...throw on a little olive oil on top of your food...and again, if anyone can incorporate fresh ginger into their meals, I'd suggest that too. But yeah...the whole diet thing will ONLY work for you if you put in the legwork, as in, persistance, and getting out there to learn about what foods it is that you like, and how to prepare them in a way that'll taste every bit as good as the meal you'd be fucking your body over with.
The main theme of a diet that works IMO? Effort...and it's hard when you've got a routine, to change it...but I find that once you actually get INTO an alternative routine, give it a week and after that point it just gets easier.

A "temporary/gimmick" diet might serve you well in the short term, but keeping weight off AFTER that time will hardly work if you gained weight without a diet in the first place.
