Not sure if you've played them, but if you like Fable, try The Elder Scrolls III: Morrowind, Bloodmoon and Tribunal. Much, much longer and larger than Fable. Not as good on the graphics and aging system though.
You may also check into the series Gothic. It's similar to Fable or Morrowind, but it's a little less, do what you want, type of game. Still pretty good.
