I'd go with mushrooms cooked off in red wine until dispersal, + spinach in a garlic, cream and brandy sauce...maybe some semi-dried tomatoes on top, lil' bit of fresh chopped basil, oregano and parsley on top of that, chilli flakes and shaved REAL parmesan. Smoked salmon torn into thin strips would probably work incredibly well here too...I like spinach fettucini.
...I think I went a little too far, I wanna make this now...
