You have to do those things properly and keep them to temperature. Then there's food segregation/cross contamination to consider, and a lot of places like this I've seen don't seem to be overly concerned. I can imagine places like these being ill equipped/educated to maintain the standards...then there's food poisoning risks if they don't...etc.
As for the fondue thing...it's pretty much a trand that's kind of died out...they ARE fun though.
I'd suggest simply buying the proper equipment and doing a few fondues yourself...they're very easy. It's not specifically meat either. Try some blanched vegetables, or seafood (I KNOW octopus would rock a fondue), it's just a matter of working out what goes with what. Just cheese is a little biring. Fruit dipped in hot chocolate fondue would probably go down well for dessert. You should be able to google quite a few recipe suggestions, if you're throwing a party/gathering though, just make sure you're aware of the required serving temperatures.
