Okay, I cooked the chili thing again, here is basically how it works. It's a loose recipe that you can do by eye, as we say. Make as little or as much as you want. And vary the proportions of the ingredients as you like. It's fun! Here it is:

Take some ground beef and cook and drain it. If you want to make it vegetarian, prepare some ground meat-style soy beef. Set aside.

Peel some potatoes and cut them into nice round slices. Throw these into a big-ass skillet and fry and brown them nicely.

Add some fresh diced tomatoes and some diced green chiles to the browned potatoes. Add a good amount of both, so they're noticeable. Throw in a good bunch of chopped garlic also.

Add the ground meat and some water. Heat the whole thing up and cook it for a good long while, stirring frequently. Add water as needed to keep the potatoes under some boiling liquid. The liquid will attain a rich soup-like consistency.

When the potatoes are tender and start to break up, the dish is done! Serve with a little rice on the side.
