The pod race, Darth Maul vs the two Jedi, Obi Wan vs Jango Fett, Darth Vs Luke (pick one), ROTJ space battle (greatest dogfight in history), the battle for hoth.....
Hell, Yoda vs Dooku was actually pretty cool.....
