There's a book called Men, Women and Chainsaws (something like that anyway) that covers a lot of gender issues in horror. As for gender, race, ect in horror movies try something like Ginger Snaps (especially for gender) Dawn of the Dead, Night of the Living Dead........ if I think of anything else I'll post it here for you.
