The film is always better than the book, agreed. In my opinion the Shining is the single exception to that rule. I can't think of another film that is better than the book.
King is entertaining but really not a great writer... the novel the Shining has its moments (such as the hedge monsters) but can be boring and repetitive, like a lot of his work. The thing that really irks me about King is that he over-writes. Sometimes brevity is a virtue.
The Shining is a great horror film but also a well-done film overall. Kubrick took King's original idea and improved on it. Jack Torrance was no longer a sympathetic character but became a true villian to express the horrible nature of the Overlook Hotel.
