Im a freakin rock star.
 
Its been a long time since Ive had a kitchen let alone worked in one. I've missed cooking for myself, I didn't think I missed cooking for other people. I had also forgotten how well known I am in this town.
Today was my first day in a new job. They threw my ass to the wolves and I loved every minute of it. No one on the line could keep up with me, not even expo. I flooded that window so fast I made server's heads spin. I really missed my pans and had no idea. Then they wanted to see me prep and gave me 40 pounds of shirmp to peel. 20 pounds for scewers and 20 butterflied. I finished the shirmp and cleaned my station in under 40 minutes.

Maybe its just because it was the first day, or maybe it was because its been so long, but I really enjoyed my day. And I already knew half the staff. I felt kinda proud when all these front of the house people would walk up to the table the chef and me were at giving me praise, excited I was there. Too bad they couldn't keep up, but whats new? ;)

I love to cook, but i dont think i could do it for a living.

Aside from not being able to keep my hand out of my pants, i dont htink i would put myself under that kind of immediate pressure again.

I haven't experianced balls to the walls there, but I can see it getting asses to elbows really quick. They seat 500 to start with and memorial day weekend is this week and I can see us doing well over 30,000 in a day. Its Jimmy Buffet's sister's restraunt. Its right on the water and sometimes Jimmy shows up to do a show. I really can't wait to be put to the test. Fine dinning is fun, time consuming and pretty, but high volume rocks, wears you out, abuses your body, chews you up, spits you out and leaves you to rott. Its what Ive been avoiding for months now but I think its going to feel good to be back in the saddle. When shit gets hectic though, I have a really dirty mouth, and Im loud as well, I really hope its a week or two before I offend someone or make a hostess cry. Little girls cry so easy when they are under pressure....:D

I went to his place in New Orleans... It was a bit of a dive...

he is closing all of his maragrita villes, supposedly, and lucy (his sister) is going to take over and expand her restraunt. Ive grown up with Jimmy, my parents are not only the two dorkiest perrot heads in the south east, they are also dear friends with Lucy. My aunt was married to 'fingers' taylor, one of the original members of buffets band. That might be why Im so warped now. I should throw my parents name around and try to get a raise ;)

i love cooking

i volunteered at this dog walk where they raised money for the dog shelter. brueggers or einstein bros, one of the 2, donated like 5 big ass bags of bagels. we didnt have real knives, just plastic ones, and they didnt want us touching the bagels, yet they gave us no gloves

so we had to hold the bagel with a napkin and used some plastic knives. anyway, this one other chick doing bagels with me was butchering em up but i was doing em so fast and so perfect bam bam bam. i finally told her 'put the bagel down bitch cuz that is NOT appetizing.' ok, no id dint. but she saw how nice mine looked and how fast i was going so i think she just handed out plates or osmething

but yeh. i love to cook, can do it fast, and efficiently, but im not sure i coudl work at a restaurant.

me and my bf are gonna volunteer for thanksgiving tho at the homeless shelter. excpet i think my parents would be kinda mad if i skipped out on TG so we'll probably volunteer the couple of days before, ya nkow, prepping food and such.

o ya. peel me some shrimp, bitch

i have a question for u barbra. i know u take out the veins and such. and i know presentation wise you USUALLY leave the tail skin on.

but heres my question. when u peel the shrimp, do u just pinch the tail end off or do u HACTUALLY pull the tail skin off. meaning, theres still some good little meet in the tail and i always eat that. it makes the shrimp look cute. my bf peeled shrimp the other day and he jujst pinched the entire thing off, the crackhead.

we had a big ass block of shrimp the other day (apparently, these r of better quality than the indiv frozen kind). anyway, i was pretty wreckless working my way through the freezer. the shrimp still had the heads on. i think they were called 'lions head' or something. anyway one of the motherfuckers stabbed me. has this fuckin long horn thing on the top of his head. that part of my palm itched all day..

... thats fuckin nasty LOL
