To my friends and associates at HDC, I have some news.

Many of you that have known me for a while now, will know also that I have developed an interest after working as a chefs assistant for a few years, that I very much enjoy cooking/food preparation - and I can say without feeling like I'm boasting about it, that I'm pretty damn good at it.

So, I've been studying at a "technical and further education" institute for a week or so now, a college type place that focuses on not only general level academic education (eg: high school) but also tertiary type courses and trades.
I'm currentlly enrolled in a writing course, out of general interest - and some basic I.T stuff too.

So - on my first day, I'm walking through the building that one of my classes is located within, and !BAM!, something smells fucking good...I figured they must've had a REALLY good cefeteria or something, then I saw it - the most beutiful sets of industrial kitchens I'd ever seen in one room, household kitchens in the next - all together there were 5 rooms, each designed for different styles and levels of cooking/food prep.
As it turned out, they were making soup...very nice.

Every day as I proceed to class, I stop at the door and watch a little from outside...nobody knows I'm there - they're far too busy. I look in, every single day, and I absolutely KNOW, without the shadow of a doubt that this is where I have to be.
I spoke of one of the teacher/chefs there last week, and I will be talking to the head teacher to negotiate being able to observe one or two of the classes.

So, I've made my mind up, here's my announcement:

As off early next year, I am going to start official studies and training to be a chef. Hell, I might even specialise eventually.
I can hardly wait to finally get to explore my full potential.
I just had to tell you guys...after years of procrastination, I've finally found direction - it's a wonderful feeling.

hmmmm sounds like a challenge to me. Fluff had to talk me thru some simple instructions over the phone once to make some chicken thing that had directions right on the box. I swore that day I'd never go hungry again...as long as the microwave was around. 'Iron Chef: Microwave Edition' LOL Set it up, massacreman.
Good luck, Cheeb. A friend of mine did that years ago and graduated head of her class. She's never cooked anything for me to date.

I'm not much into microwave cooking, I mean IMO microwaves are for microwave dinners, reheating and defrosting...although some modern microwaves enable you to do perfectly crisp crunchy bacon! That there is pretty interesting to me...

Drac, there's chilli in 90%+ of my recipes man...so trust me man, the notch has been kicked to death.

@ Cheeba...I am VERY happy for you...But...Honestly...I am extremely surprised that you didn't pursue this sooner...It was obvious to everyone where you were headed...I kinda thought it might have been something that you ventured into on your own, sort of a 'self-taught' type of thing...Your affinity for the culinary arts and experimentation are well known...You will make an amazing chef...I can already see you coming up with things that no one has ever heard of or even considered before...:cool:

Newb, BR....Thankyou....

Actuall, the reason I hadn't yet aken it up because the only campus I knew that did the whole course was across the other side of the city, and would take maybe 2 hours travel either way. Studying to be a chef is pretty full time, and I just don't think I could've handled the commuting bit on top of the already huge hours. But I've always wanted to do it, I was just too lazy to look I guess...but now that I know there's a campus close-by, as soon as I saw it, I was like "I am SO fucking there!"
So yeah...but you're right, it IS about time...and BR, I fully intend to do some of the weirdest recipes ever...I hope for the strangeness thing to become my trademark, and I might even patent sa few things if I can, maybe even open up my own place way down the line....so much to learn, this is gonna be cool - I'm pissed that I gotta wait til next year though....
