Yes...But...It's my own...I've never given it to anyone else (never thought to actually), but everyone here just loves it...I have to make LOTS at one time, and it ALL goes within an hour or so...

I guess it's really more of a 'hawaiian bread' with the pineapples in it :)

1 cup Shortening
2 cups Brown Sugar (I use brown instead of white because it gives it a richer flavor and moister texture)
4 Eggs
1 1/2 cups Mashed RIPE Bananas (about 4-6 normal sized bananas...Best when they start getting black spots and turn squishy)
2 1/2 cups Flour
1 1/2 teaspoons baking soda
1 teaspoon Salt
2 teaspoons Vanilla Extract
2 cans Crushed Pineapple (or 1 big can), or just 1 regular sized can, depending on how much pineapple you like

Mix shortening and sugar together, until smooth. Add eggs and vanilla, beat well. Add bananas. Mix completely.

In a separate bowl, mix all dry ingredients together. Add banana mixture to dry ingredients. Mix it all together. Dump in pineapples (and half the juice). Mix all very well.

Preheat oven to 350°.

Butter 13 X 9 pan and 9x9 pan (or whatever it takes for how much mixture you have, they should be filled 3/4 the way full).

Pour in mixture.

Bake approximately 45 minutes to an hour...Keep checking the middle to see if it's done after about 30-45 minutes. The size of the pans you use will determine how long it takes for them to bake all the way.

I know that doesn't sound like a 'formal' recipe...But, like I said...It's my own :)

Zero 08-12-2006 08:48 AM

yummy!

stygianwitch 08-12-2006 10:21 AM

I've copied that recipe too....it sounds delicious...
i do have 1 question though, what is 'shortening'?
we don't have anything called that in the UK, so what does it consist of/what does it do?

Fat used for cooking.
Can get hotter before it goes crazy-smoky. Can be made with animal fats, or vegetable oils (or blended) Will generally solidify at room temperature. Good for high temperature cooking.
It can also stop gluten from developing in baking...erm, that would be it will stop the gluten from becoming activated when manipulated/kneeded/rolled with dough/pastry, and stop it from forming "long" strands (which is what it does for bread) and keeps those there strands "short", for stuff like shortcrust (sweet) pastry.
And yes, the name of shortening has SOMETHING to do with that, as I'm told.

stygianwitch 08-12-2006 11:32 AM

That's great, thanks phalanx, i might have a go at this next week :)

Oops...I'm sorry...I didn't consider any possible culinary differences in other countries :o

Thank you Cheeba

And the vegetable kind is what you need to use...Do you have Crisco (the white solid kind, not the oil...Oil will NOT work)...Or anything like that?

Yeah...I know...It's not oil at all...It's kinda like a 'vegetable lard' if you can imagine that...It's called 'All-Vegetable Shortening'

I'm gonna find you a picture and see if I can locate a possible match in the UK :)

bloodrayne 08-12-2006 11:52 AM

I found the PERFECT link:
http://www.practicallyedible.com/edi...9!opendocument

And it says this there:
Many people in the UK are confused by the term "Shortening" and don't think it is available in the UK. In fact, in the UK shortening is available under brand names such as Cookeen, Trex, White Flora, etc.
