I still Know, I was a kitchenhand for a couple of years in various fast-food type places, then I got the same job in an al dente kinda restaurant, I started to get called the cook...and after some time, I was more or less in charge of the kitchen. We had a chef, and I was more or less the go-between...learned a lot from the guy, and worked there for a total of around 2 and a half years as I recall.
But that was just what got me "into" cooking/food preparation, even since then I've been self-teaching, experimenting with all kinds of stuff, trying to get better as I go. Yeah, I get mistaken for a chef a lot among the circles in which I hang, but nope....I'm just a cook. The lowenbrau rocks huh?? Such a weird building, the foods just exemplorary, and the beer...I can't remember what it was called, but I had a certain "after dinner" spirit there that was 60%+ alcohol, very nice mint flavoured shots... Yeah Gren, I_s_k we're probably someplace near eachother, we're both in Sydney...both been to the same place...wombats are cool, but there's not many in the city or anything...they can however be domesticated, but aren't often. |
My dad got a degree in Food Service Management when i was 18. hehad been cooking liek crazy for years by then, and when i was in 11th grade, ui had to cook for myself, since i was usually home for 5 hours by myself after school every night.
Eventually i started experimenting with my own stuff, and when i moved oyut of my parents, went psycho cooking for myself constantly. i love trying out new things, and have successfully conquered some very challenging recipes, including cheesecake (from scratch, the old fashioned way), and croissants. Not that anyone asked. :D |

I hate koalas too, but I have a soft dpot for wonbats for some reason...I remember the one on ACP, from way back when I was a kid, I met it once.:D twas like some kinda giant guineapig/rat hybrid chubby lil' guy. I remember the lowenbrau is in one of Sydneys first buildings, the area it's in is basically the oldest part of the city now. The ceiling inside is just the original wooden structures holding all the rocks up, with some lamps hanging from them...looks very rustic, but kinda cool, it's not a very bright place inside, but that's what I liked about it...as for the toilets, I think by the time I needed to take a piss, I'd sunk about a stein and a half so I probably relied on those I passed by to get to and from my table, I don't have much recollection..good ale.. I'm in hornsby man, urself? I'm gonna hit the lowenbrau for my birthday next year, maybe u could rock up yknow? aaanyways |

so i just made some sweet potato fries and im wondering what the hell to eat em with
right now im using ketchup, and red pepper salt. the "," signifying the 2 being seperate and not together anyway, any suggestions? i read also some curry mayonnaise but im not really downw it mayo. while on the subject, any gourmet type ideas for even regular fries? cheeba im looking in ur direction.... :D any comments would be greatly appreciated. i plan on makin fries tomorrow for lunch.. dinner... and breakfast probably too |
ISK - No, it's not that tough, only if you overcook it. It's a learn as you go type thing it cooks "differently" to most meats you'll have tried, but if it's even slightly overdone, yes, it's rubber. Prepared properly, it's awesome...I either roast mine or bbq it.
Usually, it's less than 2% fat which appeals to me greatly. The taste is a little like beef, a little like venison. It's worth a try if you ask me, just make sure to get some instruction from your butcher, as yes, its a little "sensetive". Gren Well....these are two of my recipes that'll be appearing in the vulgar gourmet, but....have a sneak peek, both should go rather well with fries. Garlic Sauce: plain yhogurt (2 small tubs) a little salt, garlic cloves minced garlic cracked pepper oregano Whole-grain mustard to taste. Serve chilled OR hot. Spicy Sourcream Sauce sour cream birdseye or habanero chilli garlic ginger (very finely chopped) preferred bbq sauce a little pulped tomato. Serve chilled. Other than those, you could make a guacemole type thing I suppose, but if you want MY recipe, you'll have to wait for the grand opening SOMETIME of TVG (that recipe coming your way soon, Vod). Right now I can tell you to start with avocado... I find generic curry powder works quite well with sweet potato fries for seasoning....uh, paprika maybe some powderised kaffir lime leaves? as for sauces, those I mentioned above should be fine...however, mixing hickory bbq sauce with whole egg mayo, a splash of worcestershire and some cajun seasoning makes for a pretty nice, simple sauce...
